Squashcakes- A healthy and delicious alternative to pancakes

2 cups mash (see below options for mash)
2 eggs
2 cups milk
1 tsp baking soda
pinch of salt
Flour

Directions:
I use a blender and add everything but the flour. If you don't have a blender, you will want to mash up food with a fork before adding other ingredients in.
Mash- Precooked squash, sweet potato, or yam. You can also use or mix with bananas, apples, strawberries and blueberries.
After you have a nice moist mash, you will want to add flour til it becomes thicker. You only need enough flour to make a nice pancake texture, which is a blend of liquidy and smooth. You may have to add more milk, if it becomes too clumpy. You will know when its the right consistency when it pours from the bowl easily.
Tips:
For extra flavor add chocolate chips or other fruit into the cakes or on top! Enjoy with syrup or plain because they are already sweet without the extra sugar.
