Apple Jelly with Spiced Apples

Follow directions on the gelatin packet you purchased, instead of water, use apple juice (we made some juice with the same apples)
To be creative and just making jelly we wanted to add some chunky apple texture, but not quite like jam

You can do this two ways;

1) Peel, core, and cook down apples, then mash and sieve through a cheese clothe.

2) Cook down 2 cups small diced apples in a large sauce pan (cored, peel if you like) and spice with cinnamon, cardamom, salt and nutmeg to taste plus 1/2 cup of the sugar from the jelly and 1/4 juice from the jelly with 2 tbls butter for about 20 minutes. Start boil of apple juice and follow jelly directions to a T!
