Jamaican Jerk-ka-bobs (Reilly's version- on a stick!!)

Prep time: 15 mins    Cook time: 20 mins    Serves: 2-4
Ingredients:

Rice:
1 can coconut milk
1 cup water
2 cups rice
1 tbls sugar

Kabobs:
1 lb ckicken
1 bottle jerk sauce of your choice
Fresh or canned pineapple
1/2 red onion
2 whole bell peppers



 Directions: This meal can be done in the oven or on the grill, we chose to cook the meat and  veggies seperate, so the veggies wouldn't get too overdone.

1) Prep your veggies. 
2) Marinate chicken and prepped veggies in separate bowls with jerk sauce for at least 15 mins. String marinated chicken on shish-ka-bob sticks
.

3) Start water and coconut milk on medium heat in medium saucepan. When boiling add in rice and stir for one min. reduce heat to low. 
4) Start cooking chicken and veggies, either in oven at 425 degrees or on BBQ for 20 mins, or longer, just make sure chicken cooked thoroughly.

Savory Stuffed Burgers

1 lbs organic ground meat or meat Alternative
1/4 c. Bread crumbs
1 egg
1/4 tsp ground pepper
1/2 tsp salt
seasonings of your choice or see variations below


Combinations to try:
Basic:  bell pepper, onion, garlic and cheddar
Mediterranean: feta and tomato (de-seeded)
Basic American- Bacon, cheddar, green onion
Blue- Blue cheese and onions
Italian- Mozzarella, basil and garlic
Herb and Cheese- Rosemary, diced provolone, garlic
Hawaiian- Pineapple, red peppers, and ham
Fajita- Bell pepper, onion, and fajita seasonings, top with salsa and sour cream

Directions: 
1) Prep meat with bread crumbs, egg and seasonings. Mix well and put aside in fridge.












2)  Get your ingredients prepped, chop veggies really small

 3) Make one sided thin patties and fill with stuffing for each.
 4) Add cheese and make another patty for the top to seal in the goodness.
 5) BBQ to your liking and enjoy the many variations you can try!!

Stuffed Zucchini- My dad's favorite

Ingredients:
6-8 medium sized zuch's
choose a cheese: feta cheese/ blue cheese/ cheddar/ pepperjack ect...
olive oil and foil
spices of your choice, I recommend cayenne, pepper, salt, cumin, mint, basil
optional:  stuff with cheeses and mushrooms, peppers, or onions

Directions:
Cut zuch's down the middle about 3/4 of the way in (like a hotdog bun). Stuff with herbs and cheeses of your choice, add bell peppers, mushrooms, onions and spices. Variations are good!!! Lightly oil outside of zuch's and place in foil, wrap, and put on the grill until tender. (you can also broil in oven)
