Vegan Split Pea Soup

Serves 4   Time: 1 hour

1 tbls olive oil
1 onion chopped
3 cloves of garlic sliced
3 cups dried split peas
6 cups water
season with salt and pepper to you liking

Directions:

1) Saute onions and garlic
2) add in peas and water
3) boil for 30 mins











 4) remove half of boiled peas and puree in a blender to make creamy

5) re-add to soup and cook until remaining peas are no longer hard

6) switch it up, add roasted peppers, add meat if you like, add other veggies like carrots

Potato, Bacon, Cheddar, Beer Soup

Prep time: 45 mins, Cook time: 30 mins, Serves: 4-5

Ingredients:
8-10 potatoes (we used red)
4 cups of whole organic milk
1 16 oz beer of your choice
2 cups of water (use potato water)
6 pieces of bacon (see rue recipe below, omit if vegetarian)
3/4 cup diced sharp cheddar
1 diced onion
4 cloves of garlic
Spices 
1 tbls salt
1 tsp pepper
1/2 tsp cayenne pepper
1/2 tsp onion or garlic power or both ;)
Few sprinkles of Oregano

Directions:
1) Start your water boiling and bacon cooking
2) Start dicing 1/2 of the potatoes and the other half boil until soft
3) Prep and saute onions and garlic
4) Once potatoes are boiled and soft pour aside water and mash up cooked potatoes as fine as you can
5) Add 2 cups of potato water, 3 cups of milk, and beer to ALL potatoes (mashed and diced) along with cheese and cooked onions and garlic
and put on med low heat
6) Start your rue, directions are below, if you are vegetarian skip this step or make with 3 tbls of butter instead of bacon grease
7) When rue is done add to soup, if omitting use a thickening agent such as arrowroot if its not creamy enough, but the mashed potatoes should be creamy enough.

8) Cook down all ingredients for 30 mins












To make bacon rue:
1-2 tbls grease
1 cup of milk
6 pieces of bacon cooked and crumbled


Cook down bacon, remove from pan, pour off all but 1-2 tbls of grease, add crumbled bacon back in, and slowly sprinkle in flour as you heat up the grease and bacon. The bacon should be coated, and grease soaked up. I usually only use a 1/4 cup total, once bacon has coat slowly add in some of your milk. We will use 1 cup of milk for this particular rue. Pour hot rue directly into already warming soup.

Creamy Potato Leek Soup

Prep time: 40 mins Cook time: 10 mins Serves: 6

Ingredients:

4 organic leeks
4 organic carrots
8 large organic potatoes or 16 small
1 sausage, vegan or chicken
3 cloves of garlic
4 cups of organic milk or milk alt.
4 cups of water
1 tbls salt
1 tsp pepper
1/2 tsp cayenne pepper
1 tsp basil
1/2 tsp oregano
1/2 tsp parsley
a few sprigs of rosemary


Directions:

1) Start potatoes in water on high.














2) Start saute pan on med-high with a coat of olive oil.
Cut leeks, carrots, garlic and sausage into small dices.





3) Saute leeks and carrots in olive oil in one regular sized saute pan on med-high. Cook garlic and sausage into smaller saute pan on medium.












This is what your stovetop should look like at this point! ;)







(Once leeks, carrots, sausage and garlic are browned, they can sit aside)

4) Start dicing the potatoes you put aside in cool water, careful they may still be very hot. Peel if you like, I peeled some but left some peels too ;)


5) The remaining potatoes in water are ready to mash, leave them in the pot, but put potato water aside for now. Mash the potatoes in the pot with milk until a very creamy mashed potato consistency at medium temperature.





















6) Add back 4 cups of your potato water to mash, stir soup with large spoon, add in your leaks and other diced potatoes, carrots and garlic but do not mash anymore.





7) Add seasonings and salt to taste. Turn to low and stir often. Its ready to eat when hot throughout.




Enjoy with a little cheese on the top with fresh ground pepper, and a side of delicious artisan bread. ;)

Kale and Asparagus Soup

Prep time: 10 mins
Cook time: 30-45
1 bunch kale, cut up small
6 stalks asparagus
1/2 red onion, sliced thin
3 cups vegetable broth
1 cup water
Tofu, or chicken sausage chucks (if you so desire)
Season to taste: Oregeno, rosemary, garlic

Directions:
Combine all ingredients into a large pot and let cook on medium for about 30- 45 mins. A great meal to throw together quick and let cook while you are up to better things :)
