Ingredients:
4 cups shredded zuchinni
1 cup brown sugar or honey
2 smashed banana
4 organic eggs
1 stick softened real butter
1 cup of water
3 cups of organic unbleached flour
2 tsp baking soda
1/2 tsp baking powder
2 tsp salt
2 tsp vanilla
1/4 tsp cardamom
1/4 tsp nutmeg
1/2 tsp cinnamon
1/2 c. ground hazelnuts
Options and additions: other kinds of ground nuts, fresh berries, sliced bananas, chocolate chips, raisens, dry fruit and any other flavors you think would be delicious!
Directions:
1) Shred up 4 cups of Zuchinni
2) Mash bananas
8) Bake 30 mins until toothpick comes out clean. I wanted it to stay really moist so I put foil over the top about half way in so the top wouldn't overcook. They turned out A-M-A-Z-I-N-G and soooo moist. You will LOVE these! Enjoy and hope you'll be back again soon to visit! Thanks so much!
I love my sweet breads with a fresh cardomom coffee and an Italian style "breakfast" of espresso, fruit, and a little pastry or bread. See more about my inspiration and Italian way of eating on some of my other pages. Have a great day!

Mash all wet ingredients together with butter and eggs
4) Add in Zuchinni and butter and mix up some more, I have a helper ;)
5) I used a mortar and pestle to grind up my hazelnuts, I like them a bigger size
6) Dry ingredients in one bowl
6) Mix wet and dry together and stir for 2 mins
7) Pour batter into baking pans and add in what special ingredients you want into each loaf and stir in gently. If you put it it all in the batter all the good stuff sinks to the bottom so its a good idea to do it this way.8) Bake 30 mins until toothpick comes out clean. I may have missed it, but what temperature do I cook these at for 30 minutes? I have everything mixed up now, so I might have to guess ;)
